A basic C6 will outperform most of the modded cars you list and could still be under warranty. Once you start modding, you introduce a lot of possible gremlins.

hands down a low milage C5 Z06 with a few bolt on mods (see Cobra4b's post) will give you more than you can use on the street, plus it will make a pretty good track car that you can flog and still drive home getting 25 + MPG

no more evo
. I bought one in 04 and loved it but i realized that after i got to about 500awhp it waas STUPID money to keep going for more power. I am older now and ready for something I can take my time with, not buy do everything immediatly then get bored with it in 6 months. I think the vette is now the main focus.
I had a 03 M3 I picked up REAL cheap, I ended up trading it on the EVO due to maint. cost's. Not that I couldnt afford them but it was real dumb to pay 100 bucks for a oil change and I didnt like the "elitest" crowd that I always ran into to.

What's a car you've always wanted to own your whole life but have never been able to until now? Your a car enthusiast, I know you have one or 7. Sounds like your at that point where you'd be able to afford something like that and practicality doesn't matter. For me that would be a GenII Viper or a 3000GT VR4. I don't care that you can make Vette faster for cheaper than a Viper or that VR4's weigh nearly 2 tons because I've loved those cars since I was a kid. Whatever that car is for you get that, fuck what everyone else thinks of it. It's YOUR dream car.
