Like I stated check your impeller and wear ring. You might have a damaged impeller. It's very common to get nick's and slight bends in a factory impeller due to them being made from aluminum. Also if you had a bad exhaust temp sensor you can swap it with the coolant temp sensor located next to the upper radiator hose going into the head. There the exact same part. Swap them to see if you set a fault code. it will be a loud solid beep sound. If it does let me know I have a ton of those sensors laying around.

By operation standards the exhaust temp sensor does not see the hot exhaust gases themselves. It sees the water temp that is heated up by the exhaust gases mixing with the water that is cycled through our complete exhaust system to keep it cool which is pressure fed by our jet pump. so its the same principle for the engine temp sensor minus the gases and the water pump on the motor is what is used to move the water through out the motor and radiator/ride plate.
