V8 would be the way to go imo. Its just easier to make power the cylinders you add. Just stay away from 302s lol idk wtf the ford engineers were thinking when they went with a large bore, short stroke engine then cut the deck height to 8.2". Either you have to sacrifice con rod length, piston compresional height or keep a short stroke. And really you don't want to do any of that

If I do v8 it's gonna be 302 based block. either a 347 stroker, or the coyote;
Wouldnt mind a 5.4dohc swap out of a navigator or a termi block.

351w are the way to go if you're gonna do a windsor sbf, depending on the year you can get a really good stroker starting project. I think starting in 74 they had 10" deckheight, not 100% sure though. And all 351w are two bolt mains so its easier and cheaper to have them machined for a splayed 4 bolt pattern. Only 2 downsides are its heavier than a 302, and some people say the its 3" mains makes it prone to spinning a bearing. However I think this can be attributed to people not doing the right prep work to the cranks and mains
